Looking to eat better? Tried low-fat
and reduced-sodium products, but
they just don't taste the same? If you
want to modify your diet without
giving up the tastes you love,
substituting natural ingredients,
rather than modified versions of
unhealthy ingredients, could do the
trick.

Tree Top, a cooperative of 1,000
grower-owners and producer of apple
sauce, apple juice and a variety of
other apple products, offers these
suggestions for using apple products
as substitutes.

* Replace butter with apple sauce in
baking recipes. This will cut the fat
in a recipe by nearly 75 percent.

* Marinate meat or fish in different
varieties of apple juice to add extra
flavoring without the extra sodium
and substantial calories.

* Reduce the sugar used in many
recipes by replacing white sugar with
apple juice.

* Freeze different varieties of apple
juice in plastic cups to make frozen
treats or in ice cube trays to zest up
water and encourage its
consumption.

* Add more fruit and flavor to your
diet with apple iced tea. Just replace
half the water with apple juice
instead.

Every five years your high school or college
class has a good reason to celebrate and you
can celebrate with a reunion party. But the
party will never happen unless you solve all the
details surrounding the party. Where are you
going to put all those people? How can you
afford to buy everything? What happens if the
weather doesn't cooperate? Who can help
you with all those details? Where do you
begin?

Many member companies of the American
Rental Association, have stores dedicated to
supplying items and offering the expertise
necessary to throw that perfect reunion party.
A good first step for party planning is to check
out a rental store's Web site for equipment
availability. You can find your local ARA store
location by visiting RentalHQ.com.

For many, the search begins with a tent. Tents
not only help to block the rain but are also
effective in providing relief from the sun. Most
party planners do not have access to enough
tables and chairs to seat all the anticipated
guests, and rental can help cover this gap.
Ingredients:
4 tablespoons unsalted butter, olive oil, or vegetable oil
1 tablespoon Pork and Veal Magic or Meat Magic
8 2- to 3-ounce lamb loin chops, about 1 inch thick, well-chilled

Directions:
Heat a heavy nonstick skillet over medium-high heat until hot, about
seven minutes. Lightly coat one side of each chop with the butter or
oil, then sprinkle buttered side evenly with 1/2 teaspoon of seasoning.
Place chops in skillet, seasoned sides down, and sprinkle top sides
evenly with remaining seasoning.

Cook about three minutes. Turn chops and, if they're extra lean, pour
about 1/2 teaspoon of melted butter on top of each. For medium rare,
cook chops three minutes more. For medium, cook four minutes per
side. Remove chops place them on serving platter (don't stack them)
While companies have vast supplies of party rental
items for throwing that perfect reunion, they are not
unlimited. Thousands of weddings and graduation
parties are happening in the summer months, which
can create shortages of the most popular items.
Summertime Shrimp and Rice Bowls (4 servings)

Ingredients:
1 pound medium shrimp, peeled and deveined
3 cups hot cooked Texmati Rice
1 11-ounce can corn, drained
1/4 cup drained, chopped sun-dried tomatoes in oil, reserving oil
1 cup shredded Italian cheese blend
1/4 cup plus 1 tablespoon slivered fresh basil leaves
1/2 teaspoon salt

Directions:
Thread shrimp on skewers. To broil in oven, place on broiler rack
coated with cooking spray. Brush shrimp with oil reserved from
tomatoes. Broil four to five inches from heat for four minutes. To
cook on outdoor grill, brush shrimp reserved oil from tomatoes.
Cook skewered shrimp over hot coals four minutes. Turn and
brush with additional oil. Grill four to five minutes or until done. In
large bowl, combine rice, corn, tomatoes, cheese, basil, and salt.
Spoon into individual bowls. Top rice with shrimp.
